Brownie Pie

Ingredients
pre-made roll out or homemade pie crust
1/2 cup flour
1 stick butter, or 1/2 cup, melted
1/2 cup cocoa powder
3 eggs
1/2 cup white sugar
1/2 cup dark brown sugar
1/4 teaspoon salt
1 teaspoon vanilla


Topping
1/2 cup chopped pecans, roasted
1/3 cup chocolate chips (milk or dark chocolate)
pre-made jarred caramel sauce, warmed


Method
1. Preheat oven to 350 degrees. Roast chopped pecans in preheated oven for 5 -7 minutes, or until fragrant.
2. Combine sugars and melted butter in a large bowl. Whisk until well-incorporated. Add eggs, one at a time, until incorporated. Add cocoa powder and whisk until incorporated. Add flour and salt, whisk until incoportated. Add vanilla and whisk again.
3. Roll out pie crust in a pie plate. Trim and crimp edges. Pour brownie batter in pie crust. Bake at 350 degrees for about 30 minutes. Pie is done when toothpick is inserted into the middle of the pie and comes out clean.
4. Just as soon as the pie comes out of the oven, top with chocolate chips, pecans and caramel. Warm caramel first in the microwave before drizzling on top of pie.

Note: Not being a fan of eggs, I reduced the amount from 3 to 2 and it turned out fine. Up to you :) Instead of using caramel sauce I opted for the readily available maple syrup.

Ingredients

1 1/2 cup milk
4 egg yolk
2/3 cup sugar
1/8 tsp salt

1/2 cup milk
1/4 cup cornflour
1 tbspoon butter
1 tsp vanilla essence

Method

1. Heat the milk on the stove, and in a bowl mix the egg yolks with sugar and salt.
2. Pour in the mixture into the heated milk.
3. Mix 1/2 cup of milk (a separate one) with cornflour. Pour into the above pan.
4. Boil on low heat (never leaving it) til it's thick.
5. When it's thick enough, remove from stove and mix in the butter and vanilla essence. Mix well.

Ingredient:
1 cup plain water
1/2 cup butter

1 cup plain flour
1 tsp sugar
1/2 tsp salt
4 eggs

Making it:
1. Boil water with butter until the butter melts and boils.
2. Quickly add in flour, sugar and salt. Stir til the mixture becomes thick and forms balls.
3. Cool the mix a bit (2-3 minutes)
4. Pour mix into mixing bowl and and add in egg one by one (beaten) while mixing it on low speed.
5. Bake at 175C for around 35minutes. Serve with cream.

Ingredients:

5-8 slices of bread (makin banyak makin keras)
500ml/2cups fresh milk
2 eggs
3/4 cup sugar
4 tbsp butter (melted)
1 tbsp cornflour
1 tsp vanilla essence
raisins

Method:

1. Soak the bread slices in milk. I find it easier to estimate how many slices to use by soaking them in the baking tin/ceramic itself. Put aside.
2. Mix egg with butter and sugar. 
3. Add cornflour and vanilla essence. Mix well.
4. Add the bread and milk. Mix well. Add raisin.
5. Pour final mix into greased baking tin. I use ceramic - scrap the tedious greasing :)
5. Bake for approx 30mins or until brown in 180degrees pre-heated oven.

[Menyapu-nyapu debu di cook-a-rama]

Ingredients:
1/2 cup self-raising flour
1/3 cup cocoa powder
1/2 cup butter
1 cup sugar
2 eggs
pinch of salt
1 tsp vanilla essence

Method:
1. Beat butter with sugar. Add egg.
2. Insert self-raising flour, cocoa and salt. Then add vanilla essence.
3. Pour batter into greased baking pan.
4. Bake in pre-heated oven : 350F for 25-35 minutes.

Done!

hello peeps .... takde idea for dessert? here i post a simple dessert recipe but taste yummy!
the concept same like castard pudding but taste a little bit different and cheaper too.haha.

SIMPLE CORNSTARCH PUDDING

1 egg - beaten
2 cups milk
3/4 cup white sugar or 1 cup of brown sugar (either one, both taste delicious!)
3/4 cup cornstarch
1 tsp vanilla extract
1 tbsp butter
1/4 tsp salt

Combine sugar, cornstarch and egg in a bowl.

Mix with a little water and beat well. (make sure cornstarch tu tak berketul-ketul)

Heat milk in a pot on low and slowly add cornstarch mixture.

Stir constantly until pudding thickens.

Finish by adding vanilla extract and butter. at this point, you can take some part of the pudding to add any other flavour like cocoa powder, rose syrup etc.

Place pudding in dish and cool in refrigerator. (Put a wrap over pudding to prevent skin from forming.)

I used small plastic containers yang normal use for pudding yang selalu ada kat rumah orang kenduri tu. and I got it in 8 containers.

Makan panas-panas pun sodap juge!!!!!!
You can use your own creativity to make it more interesting.
For example, i put some with cherries on top, sweetcorn in can, rambutan yang telah dibuang bijinya (fresh rambutan..sebab rumah tok aku tengah musim rambutan), pineapple in can, gula kabung, chocolate flavour, cebisan kurma / raisins or kalau malas sangat letak je mixed fruit coctail in can on top of it.
tak la boring sangat kan? hehe. cooking is fun! try it and you'll love it!



oh oh, btw. kelmarin aku buat tapai pulut dan hari ni dah boleh makan and it taste sedap amat! aku memang suka tapai pulut. selalunya atok aku yang buatkan bila aku rasa nak makan. tapi kelmarin aku teringin nak try buat sendiri. ingat senang ke nak buat? susah tau.. org yang ada skill je boleh buat. haha. takde la, aku tipu je. senang je buat tapai rupenye. so, my first try is succeeded! *bangga sket, snif snif*

basically nak buat tapai pulut ni memerlukan 2 bahan penting je. iaitu pulut dan ragi. mula2 masak pulut dan biarkan sejuk, then gaulkan ragi dengan pulut tu sampai rata. dan memang buat tapai ni perlu ada skil. tu sebab tangan org tua-tua buat sodap rasanya! dan yang paling penting, nak buat tapai ada PANTANG LARANG ok. haa. yang jenis banyak mulut tu, tapai dia insyallah la tak jadi. haha. sebabnya? nanti air liur memercik ke dalam tapai tu. saintifiknya, amilase bertindak balas dengan ragi tu maka tapai pun jadi kureng sedap atau masam. (aku hentam je ni ikut logic.haha).

okay, nanti bile2 rajin aku post lagi ye. next time babeh! adios~

Choc Fudge

Ija reminded me of something I've wanted to post but never got round to doing it. The choc cake's always with this fudge. It makes the cake moister. Plus, it can double as bread spread. My mum sometimes make a potful, and we eat it with sliced bread! Seriously yummy.

Ingredients

1/2 cup cocoa powder
1 cup water
1 cup Ideal evaporated milk/ fresh milk
1 cup sugar
1/2 tsp salt
1 tsp vanilla essence
1/2 cup corn flour
1/4 cup butter

Method

1. Combine all ingredients in a saucepan and mix well, making sure there are no lumps.
2. Boil on medium heat.
3. Simmer and stir continuously until it comes to spreading consistency.
4. Pour on cooled cake.

saya adalah kipas-susah-mati chocolate cake atau yang sewaktu dengannya. maka, marilah kita buat brownies pula. setelah cik alia mengeluarkan resipi kek chocolate nya.

the ingredients
3/4 cup cocoa powder - sieve
cooking chocolate - im using half of the large bar tu.- melted
125ml cooking oil/ melted butter or margerine
2 eggs
1/2 cup fresh milk
1 cup brown sugar
3/4 cup castor sugar
2 tbs vanilla
1 1/2 cups all purpose flour
1 teaspoon salt
chocolate chips - kalau takde guna cooking chocolate yg di potong kecil2
walnuts
oreo biscuit - di hancurkan.(optional)

methods
masukkan eggs ke dalam cooking oil dan kacau2 . then masuk vanilla dan susu.
ketepikan. masukkan cocoa powder kedalam mangkuk, then masuk tepung, oreo, gula, garam, chocolate chips dan kacau. then masukkan melted cooking chocolate ke dalam tepung dan kacau. pastu masukkan bancuhan minyak dan tepung tadi ke dalam mangkuk. kacau sampai sebati.
griskan bekas pembakar. taburkan walnut dan tuangkan adunan ke dalamnya. bakar dalam suhu 180c selama 30 minutes!

ehem ehem, sound check check 1, 2, 3..

Dengan sedikit bangganya saya cik Eja nak mengisytiharkan bahawa telah berjaya membuat apple crumble yang marvelous! hahaha. and the semangatnya cik Eja texting cik Alia terhadap kejayaannya itu.yahhh!

so, marilah try rakan2!



the apple
beberapa biji apple (tak kisah merah atau hijau) - dice into small chunks
then place those apples in a pot and add in some sugar (brown sugar would be the best), cinnamon powder (but i didn't put this because i don't like cinnamon) and some water. stew for 20-30 minutes or until the apples become soft. make sure u guys stir continually to prevent puree. then, toss well and place in baking tray and leave to cool.



the crumble
150g brown sugar is the best (castor sugar is a substitute)
200g all purpose flour
120g butter/margerine
oats, cornflakes, biskut Digestive (optional) - oh, kasi hancur ye!
raisins (pun optional)

beat the butter with sugar in a bowl. then combine the flour and all the additional optional thingy into the ball. kacau kacau and kacau until the mixture has a crumbly-cious texture. sprinkle the crumble topping evenly over the apples. baked in 150c for 1/2 hour or until it turn brownish. then, siap sudah!

for a better taste, leave it cool in fridge so that it hardens.

add vanilla ice-cream topping then telan lah sepuas hati! agagaga.

jangan tertipu dengan tajuk itu..hehe. sebenarnye nak bagi resipi pengat pisang. tau ke ek ape mende tu?? hentam saja laaa.. tak tahu sila lah tanya ye.

Pengat Pisang

some people called it pisang sira lemak
(pengat in english ape ek?)

Bulan-bulan puasa ni, saya amat suka pengat pisang! makan lepas terawikh, layan gila beb.hehe

Bahan membahan
Pisang Abu yg tak berapa muda tak berapa masak
Gula Kabung ( gula lain pun boleh eg. gula pasir, gula perang tp gula kabung the best! ) - agak2 sudey, ikut jumlah pisang yg ada.
Santan - 100 - 150 ml
Daun Pandan - 2-3 helai
Sagu - 2 sudu besar
Air

senang gila je nak buat. mula2, larutkan gula kabung dgn air dlm periuk atas dapur.
lepas tu, bila dah larut masukkan pisang, sagu dan daun pandan ke dalam periuk. daun pandan tu ikat simpul mati ala2 pengakap punya style. bila pisang dah agak masak dan serap larutan gula tu masukkan santan. kacau sentiasa untuk mengelakkan santan td pecah. pecah santan tu macam cair dan kelihatan berbiji-biji.(err, faham2 jela). kalau agak pekat boleh la masukkan sedikit air. then,siap! lepas tu makan la! hehe

Oh begitu yummy. Plan to do it again with apple pulak sebab sgt sedap. Mengalahkan apple pie (which was a non-mover since 10yrs ago!) to gain no.2 in my list of fav food. Dan sangat senang!

Ingredients

A
1/2 cup butter/margarine
1 cup self-raising flour
1 cup sugar : i lessened it a bit sebab nenas kinda manis dah
1 cup milk

B
1 can pineapple chunks : or as much as you like
1/2 cup brown sugar


Method

1. Mix all ingredient A in a bowl in this order: butter+flour, sugar, milk. You will get a smooth batter. Set aside.
2. Mix ingredient B in another bowl, toss well so that the pineapple is evenly coated with sugar.
3. Dalam bekas kaca, pour the sugar-coated nenas. Then pour the batter one spoonful at a time. Some prefer letak batter baru nenas. Up to you.
4. Bake at 200C for half an hour. Done!

hello pretty ladies,
don't just sit at home and be like boys (am i being feminist here, wtv) =P

okay saya cilok this recipe from some book i found in the kitchen, and decided to try it, wishing hard and crossing my 15-year-old fingers (i wish) so that it'll turn just like the one in the book.. but blergh.. the cake is physically cacat-ed but it tastes great +heee~believe me+




so here's the recipe..

ingredients :

250g butter (low-fat please darlings)
75g corn starch (kot, or bahasa zaman batunya tepung jagung ehee)
75g tepung gandum (multi purpose flour kot, ntah la)
150g soft brown sugar
6 eggs
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp buah pelaga (i have no idea what this is, i used nutmeg je)
250g mixed fruit
100g chopped walnut

here's how :

1. first, chop the walnut.. like this.. eheee


2. Line the pan or whatever it is u want to use with a bit of butter and set aside. Preheat the oven at 160C.
3. Beat the butter until it turns white. Add in sugar, bit by bit, until it turns white again. Please be patient ok, this may take a lil while.
4. Add the eggs, one by one. Continue beating until sebati (eheh)


5. Meanwhile, sift both flour with baking powder, buah pelaga, cinnamon and salt. Add mixed fruits and chopped walnut into this mixture and gaul2 la. mix well.
6. Then, add this to the butter mixture and continue beating. Mix well. It'll be like this


7. Bakar for about 1hr to 1 1/2 hours, sampai masak. When done, let the cake cool, and top it with cooking chocolate and almonds.

Mudah gilaaa. Tutup mata pun boleh makan. Buat kene bukak mata. I dedicate this to ede yang suka gilaaa pisang. Rasenye la.

Ingredients

3 or 4 ripe bananas - smashed
1/3 cup melted butter/margarine
1 cup sugar (boleh lessen to 3/4 cup)
1 egg - beaten
1 tsp vanilla
1 tsp baking soda
pinch of salt
1 1/2 cup plain flour

Method

This easy peasy recipe xpayah guna mixer. Using a wooden spatula (i used fork je. haha, malas nak cari), masukkan butter dalam smashed banana. Mix mix mix. Then mix in sugar, egg, vanilla. Mix mix mix. Masukkan pulak baking soda and salt. Last sekali masukkan flour. Mix mix mix. Pour into 4x8inch loaf pan. Bake for 1 hour (but mine took 45mins je) at 175C. Then, makan!!!

*actually time tengah buat tu baru perasan we've ran out of eggs. haha. so i added some milk. and ummi added bit of lemon juice. supposedly susu+lemon juice can substitute egg (to avoid it from being mampat). the bread turned out fine and sedap so i suppose betul la kot. haha.

The Crust

Ingredients

2 cups flour
3/4 cup butter/margarine
iced water

Method

The most important thing is to sejukkan all ingredients beforehand. At least 1/2 an hour before. Kalau tak, the crust will be all crumbly bile roll. Ok, kalau dah sejukkan, mix the butter and flour in a bowl. Be careful to use only your fingers (to retain the cold temperature of mixture) and not your palm. Mix well, producing a yellow grainy texture. Then, add water until you get a dough. Tadaa...done. Divide the dough to 2 pieces (one smaller for top, the other bigger for bottom part) and store in the fridge for approx. half an hour.

The Filling

*Actually, you can put wtv you want. These are 2 suggestions:

Chicken

cubed potatoes - rebus-ed beforehand
cubed or sliced chicken fillets - rebus-ed beforehand
instant soup - penambah rasa
pepper - lots of em
wtv you want

Apple

green apple - cored, skinned, sliced
1/2 cup sugar - or less if you use red apple
1/2 cup flour - to thicken the filling
cinnamon - but i hate it so xpernah letak

The Combining of Both

Roll the dough as thin and as big as fitting to your pie pan. Fill it up with selected filling. Roll the top dough, put it on top. Use a fork to trim the sides. Make some holes on top using the fork. Use some egg-yolk for a golden effect. Bake for approx 20mins (or until golden) at 175C.

Yeahh.

Ingredients
2 cups sugar
1 3/4 cups all purpose flour
3/4 cup cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water

Method

Mix the dry ingredient in one bowl. The trick is to sieve them altogether til they're properly mixed. Next mix in eggs, milk, oil, and vanilla. Beat 2 minutes on medium speed. Stir in boiling water (the batter would be slightly runny). Pour into pan. Set oven to 350F (dalam 165/170 degrees). Bake 30-35 minutes. Done!

Top with chocolate fudge.
